    • 1/2 Kg Dry Red Chilly
    • 750 gram Coriander Seeds
    • 50 gram Raw Rice (1/4 Cup)
    • 100 gram Channa Dal (1/2 Cup)
    • 100 gram Toor Dal (1/2 Cup)
    • 25 gram Fenugreek seeds
    • 25 gram Black Pepper (1/4 Cup)
    • 50 grams Cumin 
    • 10 gram Asafetida
    • 1 table spoon Gingelly Oil  
    • 1/2 handful Curry Leaves
    • 50 gram Turmeric

    Step 1: Heating Heavy Bottom Pan 

    Heat iron pan to dry roast the ingredient to make Sambar Powder Recipe

    Take a heavy bottom pan or iron pan to dry roast the ingredient one by one.

    • (i)Heat pan and add Channa dal to dry roast.

    • (ii) Stir continuously channa dal in low flame, it will take a few minute extra stir till becomes light brown and gives out the aroma.

    • (iii) Transfer roasted channa dal to the big plate (big plate to fill all ingredients)

    Step 3: Toor Dal Dry Roast to make Sambar Powder Recipe:

    • (i)Add Toor dal to dry roast in the same pan.

    • (ii) Stir continuously Toor dal in low flame till becomes light brown.

    • (iii) Transfer roasted Toor dal to the same big plate in which channa dal already placed.

    • (i) Add Fenugreek to dry roast in the same pan.

    • (ii) Stir continuously fenugreek in low flame till becomes light brown, so when we cook sambar it add nice aroma in it.

    • (iii) Now transfer roasted fenugreek to the same plate.

    Step 5: Raw Rice Dry Roast to make to make Sambar Powder Recipe:

    • (i) Add Raw Rice (It add the thickness to the sambar) for dry roast in the same pan.

    • (ii) Stir continuously raw rice in a low flame till becomes light brown.

    • (iii) Now transfer roasted raw rice to the same plate.

    • (i) Add Black pepper for dry roast to the same pan.

    • (ii) Stir continuously black pepper in a low flame till becomes light brown. 
    • don't over roast pepper otherwise sambar will taste little bitter

    Step 7: Cumin Dry Roast to make Sambar Powder Recipe:

    • (i) Add Cumin for dry roast to the same pan.

    • (ii) Stir continuously in very low flame, roast cumin till it become light golden brown colour. (Note - Cumin get roast very fast so be careful it should not get over roasted).

    • (iii) Now transfer the roasted cumin to the same plate.

    • (i) Next dry roast the Coriander seed, the quantity of coriander seed is high so we can't dry roast all together. Divide into 4 part and dry roast in the same pan.

    • (ii) Stir continuously coriander seed in a low flame till becomes light brown.

    • (iii) Now transfer roasted coriander seed to the same plate.

    • (iv) Repeat the same process for dry roast all coriander.

    • (i) Next turn is to dry roast Dry red chilly while roasting the dry red chilly leaves smoke to avoid this smoke add little rock salt or little oil in the pan before adding dry red chilli. (Note: To avoid the step you can dry the red chilly in the sunny rays for 2 to 3 hours and continue with next steps). The quantity of dry red chilli is also high so divide it into parts and dry roast in the pan.

    • (ii) Stir continuously dry red chilli in a low flame. (Note You can check the red chilly heat by your hand if its got warm and heated that turn off the flame)

    (Note : if the curry leaves has it greenness smell than the sambar powder get expired very soon).

    • (i) Add Turmeric to the pan for dry roast. or you can dry under sun.

    • (ii) Roast turmeric in the low flame.

    • (i) Next Asafetida (use granules it give nice flavor and aroma to sambar.
